
Popping in with a quick holiday update! I’m in the midst of Christmas cookie production. But, I’ve been meaning to get a note out to you!
I will be popping up three weekends in a row starting today! Check my events page for all the deets on when and where to find me this month.

If you have visited my online shop recently, you probably noticed I’m doing pop-up pre-orders a little differently for the holidays. I am only offering mixed dozens and my DELUXE TWO DOZEN boxes, which feature the Twelve Cookies of Christmas. More on that below. I’m doing this because mixed dozens are my most popular items. If I have to keep other types of orders in my brain, I will surely forget something. And we don’t want that to happen!
I will have individual cookies and my six-packs available for in-person sales at all my December pop-ups. First come, first served. The six packs make excellent hostess gifts for your holiday parties. Just sayin’.
So, about that special two dozen box I mentioned… my Twelve Cookies of Christmas box includes 2 of each type:
pignoli, cuccidati, pistachio pinwheels, butter cookies, Christmas confetti cookies, black and white cookies, Italian rainbow cookies, chocolate espresso amaretti, lemon ricotta, almond mezza lune, Italian wedding cookies, and biscotti.

You may notice 6 new varieties plus my signature 6 cookies. So, I’ve doubled my offerings for this particular item ✨
And, as if that wasn’t enough… these cookies are packed in a decorative box designed by my mom, Pam Gray. It features an exclusive cookie key. I’m telling you, this illustration is an absolute work of art. After you finish your cookies you can frame it and hang it on your wall. That’s what I’m doing with mine anyway!

Months ago, when I hatched the plan for these boxes, I envisioned a leisurely roll-out. I wanted to introduce all of my new cookies to you. Each would come with a lovely description of what they are and how they came to be Cookies of Christmas. But, let’s be real, there’s absolutely nothing leisurely about Christmas cookie season! So, I only managed to get one of my cookies written up. I’ll leave you with that for now and I’ll see you at a pop-up soon!

Pignoli: my most requested cookie.
You asked for it, folks, and it’s finally happening!
To be honest, I haven’t offered pignoli before because the main ingredients are pine nuts and almond paste… 💸💸💸💸💸
But, if there was ever a time for opulence, it’s the holidays. So, I’m going all in.
These babies are absolutely encrusted in pine nuts. Then, I took them a step further by adding ground pine nuts to the dough.
As I was whizzing the nuts up in the food processor, I noticed them giving off a lemony aroma. So, I added lemon zest, which perfectly complements the flavors in this cookie. 🍋✨

Let’s just say, these aren’t your basic pignoli.
Oh, and these cookies just so happen to be wheat free, for my friends avoiding gluten.
