Cookie 6 of 12 is Pistachio Pinwheels!

It’s the sixth cookie of the countdown. Half way there! Will I finish the job before Christmas?!? No one knows! But it will be close!

Can you tell I’m loopy?! Just like these cookies I’m about to describe…

Last year, I introduced my kids to the original How the Grinch Stole Christmas, and they got a bit obsessed.  Rightfully so, I might add, because it really is classic.  I love the quality of the original animation. The color and whimsy of it all.  And that Boris Karloff narration- no notes!  Maxie requests listening to the audio on our drive to preschool.

I’ve heard that the new version (versions?) of the Grinch are also good. Maybe someday I’ll check them out. But, I’m an “if it ain’t broke, don’t fix it” kinda gal. So probably not! I digress…

Every time I make pistachio pinwheels they remind me of that iconic movie. They look like a dessert the Whos might serve at their Roast Beast Feast.  Not to mention, they taste fantastic. 

These aren’t just any slice-and-bake shortbread.  Two different doughs, flavored separately with ground almonds and pistachios, get rolled up tight into what look like little cookie sleeping bags.  The ground nuts in the dough make for an unexpectedly tender cookie with maximum nutty flavor.  When sliced, that grinchy green swirl gets revealed, in all its glory.  

“So, trim up the tree with Christmas stuff, like bingle balls and Whoofoo fluff,” and be sure to have one of these pistachio pinwheels while you’re at it!
