Cookie six-packs at the Big John’s pop-up

Before I launch into the details of this weekend’s pop-up, I must extend a huge thank you to everyone who came out and bought cookies at Saturday’s pop-up at Big John’s PFI. It was a big day!

Between my preorders and walk-ins, I made over 900 cookies in one go. A new record for me!

I’m so grateful to my lovely hosts at Big John’s PFI and to my day-of support crew, my mom and sis. It takes a village!

I turned right around from Saturday’s pop-up to do a couple of big corporate gift orders on Monday. And, to be honest, my physical, mental, and emotional states lived, died, and were reborn on that quick turnaround. The holidays are a marathon for me. And last weekend was a big mid-race push. Now, here we are, inching ever-closer to the finish line!

So, I’ll be back at it again with my final retail moment of the season in just a few days.

This Saturday, December 20th, 11am-1pm, at Broadcast Coffee, Yesler Cafe.

Preorders for this pop-up sold out right away, but I will have individual cookies, cookie six packs, mixed dozens, and even a couple deluxe two-dozen boxes available for walk-ins. 

Basically I’m baking it all. Everything must go!

So come on down to Broadcast Coffee this Saturday! For my walk-ins: arrive at 11 for the best selection. Last weekend I made a ton of cookies and they were gone in 30 minutes.

Here we are with Christmas cookie 7 of 12!

Pronounced “coo-chee-dah-tee” these guys get the award for “most fun name to say.”

These cookies taste like mince pie  But, make it a cookie, and give it a fun Italian name! 

The flavor profile here is unmistakably “Christmas.” Fig filling, accented with toasted nuts and warm winter spices, gets wrapped up in a layer of buttery pie-crust-like pastry and topped with a zingy orange glaze.  

I describe these cookies as Fig Newton’s grown up cousin. Sweet, sophisticated, and a little spicy.
