Christmas Confetti Cookies

I first started making confetti cookies with rainbow sprinkles for Pride. People loved them so much I brought them back for the holidays- this time with festive sprinkles.

The soft and chewy interior of these cookies are lightly scented with vanilla and almond. Inspired by the birthday cake cookies at Hello Robin, I added white chocolate chips to the cookie dough. 

I think they really make the cookie, studding them with rich flavor and providing a little textural contrast. 

Encrusted in colorful sprinkles, these cookies are irresistible to every child, and child-at-heart. I mean, who doesn’t love a super sprinkle moment?!?

Peppermint Mocha Biscotti

Uh, well, this is awkward. I developed this cookie a couple years ago as an ode to the candy-cane-flavored rocket fuel in a red cup. You know the one. From a certain Seattle-based coffee company that may or may not be currently mired in a labor rights scandal

That said, this cookie is really effin’ good. And I only get to make it once a year. And I sell it at an independent, socially-minded coffee shop (shout out to Broadcast Coffee). So, I’m going ahead with it. 

Flavored with cocoa and espresso, studded with peppermint chips, coated in chocolate, and topped with festive sprinkles, this riff on my classic biscotti is inspired by that iconic holiday bevvie from your local, independent, coffee shop, of course.
